Below is a 'souvenir' menu I designed and placed on our guest's plates before lunch was served on Sunday. To be forewarned is to be forearmed and I think this is important if you're doing something a bit out of the ordinary. You may tell someone that they will be having seven courses and they may shrug that off as hyperbole. After all, at many restaurants where there is a set menu two of the five courses turn out to be coffee and the finger bowl. When the courses are written out in black and white, the enormity of the occasion sinks into the guest's minds. And once the guests stop shaking and their eyes stop doing laps of their sockets, the business of serving up all those tiny courses can begin.
